You’re only as a good as Your Breakfast

Let’s face it, it’s Monday. Nobody likes Mondays. Mondays remind us of the beautiful weekend spent basking in the sun or a snowy slop somewhere in the world. Mondays remind us the day events and house warmings we attened. It reminds us of family gathering and friend game nights that became never ending. Ahh Mondays, it’s certainly not our favorite time of the week. But we can change this emotion that over takes us come Monday morning. We can make it a change and it starts with our breakfast.

You often hear people say if you make your bed in the morning it means you’ll have a great day because you accomplished one thing. Well I say good food brings joy to the start of a new day. Waking up and treating yourself to a beautiful breakfast is like taking yourself on all paid for vacation with food and excursions included. Anytime I get up in the morning I strive to treat myself with my food, surprising my taste buds with every bite. I work hard throughout the day becasue I’m eager to try my delicious creation I made for lunch.

Is breakfast my favorite meal of the day? It’s on the lower end of the spectrum. But a hearty breakfast (which is one the most important meals of the day) makes the start of the day more bearable. You’re only as good as your breakfast so make it count. One of my favorite breakfast meals is a beautiful pan roasted potatoes with options of adding in your toppings. You can make this ahead of time and store in your fridge for meal prepping. When I eat this magnificent creation I feel energized and creamy inside.

So don’t cheat yourself out of a good breakfast meal. Strengthen your body for the day and give it an extra boost of joy with your beautiful breakfast creation.

  • 4-5 russet potatoes (washed and peeled)
  • 4 eggs
  • Green Onions (garnish, optional)
  • Cheese
  • Bacon
  • Salt
  • Red pepper
  • Anything additional
