Breakfast Done Easy: I Made Bon Appetit Blueberry Bliss Pancakes

Hi All! I’m back with another video. Highly requested by YOU GUYS :). Today I’m showing you how I made my Mother’s Day Breakfast for my mother. I was inspired and got the recipe from Bon Appetit’s 2013 magazine issue. I would highly recommend you purchasing Bon Appetit magazine as they have great recipes on different meals from vegan to meat lovers.

The Blueberry Blossom Pancake

Streusel

  • 1/2 cup of old Fashioned Oats
  • 1 cup all-purpose flour
  • 2 TBSP brown sugar
  • 1/4 cup unsalted melted butter

Batter

  • 1 cup all-purpose flour
  • 2 TBSP white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 kosher salt (I subbed in regular salt)
  • 1 1/2 buttermilk (I subbed in plain yogurt)
  • 2 TBSP unsalted melted butter
  • 1 cup blueberries
  • 1 tsp of vanilla (optional)
  • 1/2 tsp of nutmeg (optional)
  • 1 tsp of cinnamon (optional)

Syrup

  • Mine was homemade but you can follow the original recipe
  • 3/4 cup pure maple syrup
  • 1/4 cup blueberries

Fruit Salad

  • Your choice– choose the fruits of your choice
  • Strawberries
  • Blueberries
  • Mandarin oranges
